Serves 1
Ingredients:
- 1/3 Butternut squash
- 1/2 Sweet Potato
- 1/2 clove Garlic
- 1 Spring Onion
- 1 Tbsp. grated Ginger
- 2 Tbsp. Olive oil
- 1 cup fresh Orange Juice
- Salt & Pepper
- 5 cups Hot water
Method:
- Chop the Butternut Squash, Sweet Potato, Garlic, Spring Onion and Ginger.
- Pour the oil, Salt & Pepper and chopped ingredients in a pan.
- Mix all the ingredients for around 5 minutes.
- Add the orange juice.
- Add the water and bring to the boil. Once it starts boiling lower down and simmer for around 15/20 minutes.
- After the 20 minutes pour the mixture in a blender until the texture is soft and creamy.
